| Louisiana Live Crawfish Now In Season $ 2.50 Per Pound Plus Air Cargo Airport To Airport Only Requires a minimum order of one sack of crawfish averaging between 36-40 lbs per sack. Bulk Discounts @ $2.25-lb. are available for orders of 120-lbs or more. Due to increased airline fuel, taxes and security charges as well as differences on air cargo charges charged between the air carriers, air cargo will be airport to airport shipped collect unless prearrangements are made. Southwest Airlines averages approximately .65 cents per lb. with a 100-lb minimum charge while Delta, United Airlines, US Air and Continental average $1.25 per lb. with a 100-lb minimum charge which includes security, fuel and US. Any claims of damaged or misrouted products should be made through the responsible air carrier. The customer is responsible for requesting additional insurance or declared value at the time of purchase with the Crawfish Company at an additional charge by the air carrier. Unless instructed otherwise, the Crawfish Company will declare NVA or "No Value”. General Air Cargo is transported on a "Space Available" basis only unless premium shipping "MUST RIDE" is purchased at an additional cost. The customer is responsible for inspecting the shipment to verify that the shipment is undamaged before accepting the shipment. If the shipment is damaged, the customer is responsible for filing a damaged goods claim with the air carrier. Refusal of a shipment without inspecting the shipment and not filing a claim with the air carrier voids any refund that the customer might be entitled to by the air carrier or the Crawfish Company. | 2 to 2 1/2 pounds large frog legs 1/3 cup lemon juice crushed ice 1/3 cup milk 2 eggs -- separated 2 teaspoons vegetable oil salt and pepper red pepper 2 cups all-purpose flour vegetable oil for deep frying |
| Wash frog legs thoroughly. Place in a large bowl; sprinkle with lemon juice, and cover with crushed ice. Refrigerate 1 to 3 hours. In a small bowl, whisk together milk, egg yolks, and 2 teaspoons oil. Beat egg whites until stiff; fold into milk and egg yolk mixture. Sprinkle frog legs with salt, pepper & red pepper to taste; dip each in milk-egg mixture, then dredge in flour. Heat vegetable oil in a deep-fryer or skillet to 375°. Fry frog legs until golden brown. With a slotted spoon, transfer to paper towels to drain. Serves 4 to 6. |
