Lisa's Fried Crawfish Tails
• 1 egg
• 1 cup milk
• 1 teaspoon salt
• 1 teaspoon red pepper
• 4 cups corn meal
• 1 quart oil for frying
• 1 lb crawfish (shelled)
Items Needed:
1. Mix egg, milk, salt, and red pepper (whip until blended)
2. Add 1 cup corn meal (whip until blended)
3. Heat oil to 400 F
4. Place peeled crawfish tails in mixture, and mix until coated
5. In a separate container, place remaining corn meal
6. Roll coated crawfish tails into corn meal until coated
7. Carefully place crawfish tails into oil and fry until golden brown
8. Allow to drain on paper towels
